
One serving of byakuya (Japanese for white night) ice cream costs $6,380. According to the Guinness Book of Records, the price makes ice cream the most expensive in the world.
A standout dessert also includes Parmigiano Reggiano and sake lees (or sake kasu), a by-product of Japanese sake production that contains alcohol (8%). Cellato developed the fragrance with Tadayoshi Yamadi, the chef at the famous RiVi restaurant in Osaka, who reportedly sought to combine European and Japanese flavors for a unique result.
“It took us over 1.5 years to make it, with a lot of trial and error to get it to taste right,” a company spokesperson previously said in the Guinness Book of World Records.
The company added that its mission is not just to make expensive sweets, but to create a “culinary adventure” that combines European ingredients and traditional Japanese dishes.
According to Cellato’s website, the sweet is available for sale in Japan and shipped directly to consumers. Cellato is reportedly planning to launch products with other combinations of luxury ingredients such as champagne and caviar.
