
I haven’t been to Geranium in Copenhagen so I can’t comment on if it’s the best restaurant in the world; not that I’m certainly one of the experts who think it is, and that’s why they put it first in the list of the 50 best restaurants in the world, published a few days ago.
It is known that Scandinavian cuisine in recent years has succeeded in many innovations, not only in dishes, but also in general philosophy, for example. I can’t help but admire the decision of the owners of Geranium to work four days a week in order to maintain a balance between work and free personal time. It’s a great attitude to life, and it’s not the only one, there’s a lot of sensitivity to the environment, the threat of climate, the proper management of natural resources, the protection of biodiversity, the “throw nothing away” philosophy.
In this list, in addition to Scandinavia, Peru stands out with very good restaurants and in general Latin America, Spain, a classic culinary power, and of course France, Italy, Britain, the USA. So far, so good.
However, after reading from 1 to 50 restaurants and the cities in which they are located, I am really surprised at the absence of Greece. Doesn’t any Greek restaurant deserve to be in the top 50 in the world? I find it hard to believe that Spondi, Etrusco, Winch and a few others can’t make the top 50.
This, of course, is not the fault of the chefs and their team. Several chefs who are now on Greek soil working in Athens as well as the islands have gone through the restaurants on this list. They worked together with big names. There is an abundance of talent, knowledge, imagination, innovation. There are entrepreneurs in the food service industry who strive for excellence and invest in their business to provide their teams with the latest advancements in the field. The impressive rise in quality at all levels makes it hard to see that Greece isn’t in the top 50 restaurants in the world.
